  • 1.5 pounds boneless, skinless chicken breasts (about 23 medium breasts)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1.5 cups)
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (4 oz) diced green chiles
  • 1 chipotle pepper in adobo sauce, minced
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper (start with 1 teaspoon salt and ½ teaspoon pepper)
  • Juice of 2 limes (about 3 tablespoons)
  • 1 ripe avocado, diced
  • ½ cup fresh cilantro, chopped
  • ½ cup crumbled queso fresco or shredded Monterey Jack cheese
  • 1 lime, cut into wedges
  • Crunchy tortilla strips or crushed tortilla chips
  • Sour cream or Mexican crema (optional)

Instructions

  1. Sauté the aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic, cumin, smoked paprika, and dried oregano. Stir constantly for 30 seconds until fragrant. Scrape into the slow cooker.
  2. Build the broth: Add fire-roasted tomatoes (with juices), diced green chiles, minced chipotle pepper, and chicken broth to the slow cooker. Stir to combine.
  3. Add the chicken and season: Nestle chicken breasts into the liquid. Season with 1 teaspoon salt and ½ teaspoon black pepper. Do not add lime juice, black beans, or corn yet.
  4. Slow cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken shreds easily and reaches 165°F.
  5. Shred the chicken: Remove chicken to a cutting board, shred with two forks, and return to the slow cooker.
  6. Add remaining ingredients: Stir in drained black beans, frozen corn, and lime juice. Taste and adjust salt and pepper. Let heat through for 10-15 minutes on low.
  7. Prepare toppings: Dice avocado, chop cilantro, crumble cheese, and arrange tortilla strips and lime wedges.
  8. Serve: Ladle soup into bowls. Top with avocado, cilantro, cheese, tortilla strips, sour cream (if using), and a squeeze of fresh lime.

Notes

Don’t skip sautéing the aromatics—it adds depth. Add lime juice at the very end to preserve brightness. Shred chicken while warm for best results. Toast tortilla strips in a 350°F oven for 5 minutes to revive crunch. Soup thickens if mashed beans are stirred in. Freezes well for up to 3 months.
