  • pounds (680g) ground beef or ground turkey (lean, about 85% lean recommended)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup (120ml) water or beef broth
  • 12 small corn or flour tortillas (soft, warmed before serving)
  • 1 cup (240g) canned black beans, rinsed and drained
  • 1 cup (120g) shredded cheddar or Mexican blend cheese
  • 1 cup (150g) shredded lettuce
  • 1 large ripe tomato, diced
  • ½ cup (120g) sour cream or Greek yogurt
  • ½ cup (120ml) salsa or pico de gallo
  • 1 avocado, sliced or mashed
  • Fresh cilantro, chopped (optional)
  • Lime wedges for squeezing
  • Optional extras: pickled jalapeños or hot sauce, radishes thinly sliced, pre-made guacamole

Instructions

  1. Finely chop the onion and mince the garlic. Dice the tomato, shred the lettuce and cheese if not pre-shredded, and slice the avocado. Rinse and drain the black beans. Set all toppings in separate bowls for easy taco assembly.
  2. Heat a large non-stick skillet or cast-iron pan over medium-high heat. Add the ground beef or turkey and cook, breaking it apart with a spatula, until browned and no longer pink (about 6-8 minutes). Drain excess fat if necessary.
  3. Add the chopped onion and garlic to the skillet. Stir and cook until softened and fragrant, about 3 minutes.
  4. Sprinkle in chili powder, smoked paprika, cumin, oregano, salt, and pepper. Stir well to coat the meat evenly with the spices.
  5. Pour in ½ cup (120ml) water or broth, reduce heat to medium-low, and simmer uncovered until the liquid reduces and the meat mixture thickens slightly, about 5 minutes. Stir occasionally to avoid sticking.
  6. While the meat simmers, warm tortillas in a tortilla warmer, on a dry skillet for 30 seconds per side, or wrapped in a damp paper towel in the microwave for 45 seconds. Keep warm by wrapping them in a clean kitchen towel.
  7. Optionally, warm the black beans in a small saucepan over medium heat or microwave until heated through. Season lightly with salt and a pinch of cumin if desired.
  8. Arrange tortillas, taco meat, beans, and toppings buffet-style. Encourage everyone to build their perfect taco with their favorite combinations.

Notes

If the meat mixture seems too dry, add a splash more water or broth. If too wet, simmer a few extra minutes to thicken. Warm tortillas properly to avoid cracking. Prepare toppings ahead to save time. Adjust salt and spice to taste. Lime wedges add a fresh finish. Leftovers keep well refrigerated for up to 3 days.
