Easy Freezer-Friendly Patriotic Ice Cream Sandwiches

These festive, no-bake ice cream sandwiches are quick to make, freezer-friendly, and perfect for summer celebrations like the Fourth of July. They combine creamy vanilla ice cream, chewy cookies, and patriotic toppings for a crowd-pleasing dessert.

  • 1 quart (4 cups) vanilla ice cream, softened slightly
  • 24 sandwich cookies (chocolate chip, sugar cookies, or soft chocolate wafers)
  • 1 cup fresh strawberries, sliced thinly
  • 1 cup fresh blueberries, whole
  • 1/4 cup red sprinkles (optional)
  • 1/4 cup blue sprinkles (optional)
  • 1/2 cup mini marshmallows (optional)
  • Non-stick cooking spray or parchment paper for lining trays

Instructions

  1. Let the vanilla ice cream sit at room temperature for about 5-10 minutes until scoopable but not melted.
  2. Line a baking sheet with parchment paper or a silicone mat for easy freezing and transfer.
  3. Lay out half of the cookies flat-side up on the baking sheet (12 cookies for 12 sandwiches).
  4. Using a spatula or butter knife, scoop about 2 tablespoons (30 ml) of softened ice cream onto each cookie and spread gently to the edges without overfilling.
  5. Sprinkle sliced strawberries, blueberries, red and blue sprinkles, and mini marshmallows evenly over the ice cream layer.
  6. Press the remaining cookies flat-side down gently but firmly on top of the ice cream and toppings.
  7. Place the baking sheet in the freezer for at least 2 hours, or until sandwiches are firm and ice cream is solid.
  8. Once frozen, transfer the sandwiches to a freezer-safe container or zip-top bags, layering parchment paper between sandwiches to prevent sticking.

Use softer cookies to avoid cracking during assembly. If ice cream is too hard to spread, let it soften a bit longer; if too soft, chill briefly in the freezer.
