These easy freezer-friendly patriotic popsicles are a quick, colorful, and refreshing summer treat featuring layers of blueberries, Greek yogurt, and strawberries. Perfect for parties and kid-approved, they deliver a festive red, white, and blue burst of flavor.

Ingredients

  • 2 cups blueberries, fresh or frozen
  • 2 cups strawberries, hulled and sliced
  • 2 cups Greek yogurt, plain or vanilla
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon freshly squeezed lemon juice
  • 1 cup water
  • 1 tablespoon granulated sugar (optional)
  • Popsicle molds (enough to make 24 popsicles)

Instructions

  1. Prepare the Blueberry Layer: In a blender, combine 2 cups of blueberries, ½ cup water, 1 tablespoon honey (or maple syrup), and ½ tablespoon lemon juice. Blend until smooth but still slightly textured. Transfer this mixture to a bowl.
  2. Prepare the Strawberry Layer: Rinse out the blender, then blend 2 cups of sliced strawberries with ½ cup water, 1 tablespoon honey, and ½ tablespoon lemon juice until smooth. Set aside in a separate bowl.
  3. Prepare the Yogurt Layer: In a bowl, mix 2 cups Greek yogurt with 1 tablespoon honey and ½ tablespoon lemon juice. Stir until well combined and creamy.
  4. Layer the Popsicles: Spoon about 1 tablespoon of blueberry mixture into each mold. Smooth it out with the back of a spoon. Freeze for 30 minutes to set slightly.
  5. Add 1 tablespoon of the yogurt mixture over the blueberry layer. Freeze again for 30 minutes.
  6. Top with 1 tablespoon of the strawberry mixture. Insert popsicle sticks and freeze the molds for at least 4 hours or overnight until completely firm.
  7. Unmold and Serve: Run warm water over the outside of the mold for a few seconds to release the popsicles easily. Enjoy immediately or store in a freezer-safe container for up to 2 weeks.

Notes

Do not skip freezing intervals between layers to keep colors distinct. Use ripe berries for best flavor. For vegan version, substitute Greek yogurt with coconut or almond milk yogurt and honey with maple syrup. If fruit is very juicy, add more yogurt or unflavored gelatin to help popsicles hold shape. Store popsicles in airtight container for up to 2 weeks. Let sit at room temperature 3-5 minutes before serving for softer texture.
