  • 8 slices deli ham (honey ham or black forest ham)
  • 8 slices cheddar cheese (sharp or mild)
  • 4 tablespoons cream cheese, softened
  • 1 teaspoon ranch seasoning mix (optional)
  • Lettuce leaves (optional, romaine or butter lettuce)
  • Mayonnaise or mustard (optional, for spreading)

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 15 minutes before you start, or microwave it for about 10 seconds until it is spreadable. You want it soft but not melted.
  2. Mix the spread: In a small bowl, combine the softened cream cheese with the ranch seasoning mix. Stir until it is completely smooth and evenly combined.
  3. Prepare the tortillas: Lay one flour tortilla flat on your cutting board. Using a butter knife or offset spatula, spread a thin, even layer of the cream cheese mixture all the way to the edges.
  4. Layer the ham: Place 2 slices of deli ham on top of the cream cheese, overlapping them slightly to cover the tortilla. Leave about a half-inch border around the edges.
  5. Add the cheese: Place 2 slices of cheddar cheese on top of the ham, again overlapping slightly. If you are using lettuce, lay a few leaves on top of the cheese now.
  6. Roll it up tight: Starting from the bottom edge, roll the tortilla away from you as tightly as you can without tearing it. Use your fingers to tuck the filling in as you go. Once it’s fully rolled, place it seam-side down on a plate.
  7. Let it set: Wrap the rolled tortilla in plastic wrap and pop it in the fridge for about 5-10 minutes. This step is crucial—it helps the cream cheese firm up and makes slicing so much easier.
  8. Slice into sushi rolls: Unwrap the chilled roll and place it on the cutting board. Using a sharp knife, slice the roll into 1-inch thick rounds. Use a gentle sawing motion and don’t press down too hard. You should get about 6-8 pieces per tortilla.
  9. Serve immediately: Arrange the little rounds on a plate with the cut sides facing up so you can see the pretty spiral of ham and cheese. Serve right away or pack them in a lunchbox.

Notes

For best results, let the cream cheese come to room temperature before spreading. If the tortilla cracks when rolling, microwave it for 5 seconds to make it more pliable. Do not overfill the tortilla. For cleaner slices, chill the roll for 5-10 minutes before cutting. Store uncut rolls wrapped in plastic wrap in the fridge for up to 3 days; slice just before serving.
