A no-fuss, sticky-sweet crockpot chicken thighs recipe with caramelized onions that delivers tender, flavorful comfort food perfect for busy days or late-night cravings.

  • 6 bone-in, skin-on chicken thighs (about 3 pounds / 1.4 kg)
  • ⅓ cup (113 g) honey
  • 4 cloves garlic, minced
  • 3 large yellow onions, thinly sliced
  • ¼ cup (60 ml) soy sauce (low sodium recommended)
  • 2 tablespoons (30 ml) apple cider vinegar
  • 2 tablespoons (30 ml) olive oil
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • Optional: chopped parsley or thyme for garnish

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add thinly sliced onions and a pinch of salt. Stir occasionally and cook slowly until onions turn golden brown and fragrant, about 20 to 25 minutes. Lower heat if onions start to stick or brown too fast.
  2. While onions caramelize, whisk together honey, soy sauce, minced garlic, apple cider vinegar, black pepper, and salt in a small bowl to make the sauce.
  3. Pat chicken thighs dry with paper towels. Optionally season lightly with salt and pepper.
  4. Place chicken thighs skin side up in the crockpot. Pour honey garlic sauce evenly over the chicken. Spread caramelized onions on top and around the thighs.
  5. Cover and cook on low for 6 to 7 hours until chicken is tender and reaches an internal temperature of 165°F (74°C). Sauce will thicken and become sticky.
  6. Optional: For extra crispy skin, transfer chicken to a baking sheet and broil for 2-3 minutes, watching closely to avoid burning. Garnish with fresh herbs before serving.

Notes

Caramelize onions slowly over medium-low heat to avoid burning and develop sweetness. Pat chicken dry before cooking for better skin texture. If sauce is too thin near the end, remove lid and cook on high for 20 minutes to reduce. Broiling after slow cooking crisps the skin nicely. Can be adapted for oven or Instant Pot.
