These turkey pinwheel wraps are quick, easy, and perfect for make-ahead lunches. They combine lean turkey, creamy spread, and fresh veggies rolled in soft tortillas for a satisfying and portable meal.

  • 8 oz turkey breast slices (deli-sliced, lean)
  • 4 oz cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 cup fresh spinach leaves
  • ½ cup red bell pepper, thinly sliced
  • ½ cup shredded carrots
  • 2 green onions, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. In a mixing bowl, combine softened cream cheese, mayonnaise, lemon juice, salt, and pepper. Stir until smooth and creamy. Adjust seasoning to taste.
  2. Place one tortilla flat on a clean surface. If too stiff, warm for 10 seconds in the microwave to soften.
  3. Spread a thin, even layer of the cream cheese mixture over the entire tortilla, leaving about a ½-inch border around the edge.
  4. Layer turkey slices evenly over the cream cheese. Add fresh spinach leaves, red bell pepper slices, shredded carrots, and green onions, keeping layers flat.
  5. Roll the tortilla tightly into a log, starting at one edge. The tighter the roll, the better it holds together.
  6. Wrap the rolled tortilla tightly in plastic wrap or parchment paper and refrigerate for at least 1 hour to firm up.
  7. Unwrap and use a sharp serrated knife to cut the roll into 1-inch thick pinwheels. Arrange on a plate or pack for lunch.

Notes

Use softened cream cheese for easy spreading. Chill wraps before slicing for clean pinwheels. Avoid overstuffing to prevent falling apart. Gluten-free tortillas and dairy-free cream cheese can be used for dietary adaptations.
