These Easy No-Bake Peanut Butter Protein Balls are a quick, fudgy, and healthy snack that comes together in under 10 minutes. Perfect for meal prep, post-workout refueling, or a guilt-free sweet treat.

Ingredients

Scale
  • 1 cup creamy peanut butter (natural or regular; avoid no-stir kind if possible)
  • 1/2 cup honey or maple syrup (use agave for vegan option)
  • 1 cup old-fashioned rolled oats (not quick oats; use certified gluten-free if needed)
  • 1/2 cup chocolate protein powder (Orgain or Garden of Life recommended; vanilla or unflavored also work)
  • 1/4 cup ground flaxseed or chia seeds
  • 1/4 cup mini chocolate chips (optional; dark chocolate preferred)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Combine the wet ingredients: In a large mixing bowl, add 1 cup creamy peanut butter, 1/2 cup honey (or maple syrup), and 1/2 teaspoon vanilla extract. Stir until smooth and well combined. If peanut butter is thick, microwave for 10-15 seconds to loosen.
  2. Add the dry ingredients: Add 1 cup rolled oats, 1/2 cup chocolate protein powder, and 1/4 cup ground flaxseed or chia seeds. Stir with a rubber spatula until no dry streaks remain. The dough will be thick and slightly sticky.
  3. Fold in the chocolate chips: If using, gently fold in 1/4 cup mini chocolate chips and a pinch of sea salt until evenly distributed.
  4. Chill the dough (optional but helpful): If dough feels too sticky, refrigerate for 15-20 minutes to firm up.
  5. Roll into balls: Using a small cookie scoop or tablespoon, portion out the dough and roll between palms to form smooth balls. You should get about 18-20 balls. Lightly wet hands with water if dough sticks.
  6. Place on a tray: Line a baking sheet or plate with parchment paper and place the rolled balls on it, leaving space between them.
  7. Chill to set: Refrigerate for at least 30 minutes before serving to allow them to firm up and develop fudgy texture.
  8. Store properly: Transfer chilled balls to an airtight container. Refrigerate for up to 2 weeks or freeze for up to 3 months.

Notes

For best texture, use room-temperature peanut butter. If dough is too dry, add a teaspoon of honey or splash of milk. If too sticky, add a tablespoon of oats or protein powder. Wet hands with water when rolling to prevent sticking. Balls are best after chilling—flavors meld and texture becomes fudgy. For nut-free version, use sunflower seed butter.
