This 30-minute sheet pan dinner features juicy bratwurst, caramelized apples, and jammy onions, all roasted together on one pan for a cozy, crowd-pleasing meal that tastes like Oktoberfest at home.

  • 46 bratwurst or German-style sausages (about 450g / 1 lb)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon caraway seeds (optional)
  • 2 medium apples (about 300g / 10.5 oz total), one sweet and one tart
  • 2 medium yellow onions (about 300g / 10.5 oz total)
  • 2 tablespoons unsalted butter (28g / 1 oz), melted
  • 1 tablespoon apple cider vinegar (15 ml)
  • 1 tablespoon brown sugar (12g / 0.4 oz)
  • ½ teaspoon salt (3g)
  • ¼ teaspoon black pepper (1g)
  • ¼ teaspoon ground cinnamon (optional)
  • Whole grain mustard (for serving)
  • Fresh parsley, chopped (for serving)
  • Crusty bread or soft pretzels (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the middle of the oven.
  2. Line your sheet pan with parchment paper or foil.
  3. Core the apples and cut them into ½-inch (1.25 cm) thick wedges. Cut the onions into ½-inch (1.25 cm) thick wedges, keeping the root end intact.
  4. In a small bowl, whisk together the melted butter, apple cider vinegar, brown sugar, salt, pepper, and cinnamon (if using).
  5. Place the apple and onion wedges on the prepared sheet pan. Pour the butter mixture over them and toss until evenly coated. Spread in a single layer, leaving space in the middle for the sausages.
  6. Place the sausages in the center of the pan, nestled among the apples and onions. Drizzle with olive oil and sprinkle with caraway seeds if using.
  7. Roast for 15 minutes.
  8. After 15 minutes, flip the sausages and stir the apples and onions.
  9. Roast for another 10-15 minutes, until sausages are browned and cooked through (internal temperature 160°F / 71°C) and apples are tender but still holding their shape. For extra browning, broil for the last 2 minutes.
  10. Let rest on the pan for 5 minutes. Sprinkle with fresh parsley and serve with whole grain mustard and crusty bread.

Notes

Don’t skip lining the pan to avoid sticky cleanup. For best results, use a mix of sweet and tart apples. If doubling the recipe, use two pans and rotate halfway through. Pricking sausages is optional; leaving them whole keeps them juicier.
