Instructions

  1. In a large mixing bowl, whisk together 1 1/2 cups all-purpose flour, 3 1/2 teaspoons baking powder, 1/2 teaspoon baking soda, 1 teaspoon salt, and 1 tablespoon granulated sugar until evenly blended.
  2. Add 1 large egg, 1 1/4 cups milk, 3 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract to the dry ingredients. Gently whisk until just combined; batter should be a little lumpy but smooth overall.
  3. Let the batter rest for 5 minutes at room temperature to allow the baking powder and baking soda to activate.
  4. Preheat a non-stick skillet or griddle over medium heat. Test by flicking a few drops of water; if they dance and evaporate, the pan is ready.
  5. Lightly grease the pan with butter or oil. Pour about 1/4 cup batter per pancake onto the pan. Cook for 2-3 minutes until bubbles form and edges look set, then flip carefully and cook for another 1-2 minutes until golden brown.
