This easy red, white & blueberry icebox cake is a no-bake dessert made with just four ingredients: graham crackers, whipped cream, strawberries, and blueberries. It’s perfect for summer gatherings and requires only 20 minutes of active prep time.

  • 1/4 cup (30 g) powdered sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1416 full sheets graham crackers (approximately 200 g)
  • 1 cup (150 g) fresh strawberries, hulled and sliced
  • 1 cup (150 g) fresh blueberries
  • Optional garnish: extra berries, mint leaves, or a dusting of powdered sugar

Instructions

  1. In a large chilled bowl, combine 2 cups cold heavy cream, 1/4 cup powdered sugar, and 1 teaspoon vanilla extract. Beat on medium speed for 2 minutes, then increase to high speed until stiff peaks form (about 5 minutes total).
  2. Rinse and dry the strawberries and blueberries. Hull the strawberries and slice into thin rounds, about 1/4-inch thick. Pat dry with a paper towel.
  3. Spread a thin layer of whipped cream (about 2 tablespoons) on the bottom of an 8×8-inch baking dish. Arrange a single layer of graham crackers on top, breaking as needed to fill gaps.
  4. Spread one-third of the remaining whipped cream evenly over the graham crackers. Scatter half of the sliced strawberries and half of the blueberries evenly over the cream.
  5. Place another layer of graham crackers on top of the berries. Spread another third of the cream over the crackers. Add the remaining strawberries and blueberries. Top with a final layer of graham crackers.
  6. Spread the remaining whipped cream over the top layer of graham crackers, smoothing evenly to the edges.
  7. Cover tightly with plastic wrap or aluminum foil. Refrigerate for at least 6 hours, preferably overnight, until the graham crackers have softened.
  8. Before serving, garnish with extra berries and mint leaves if desired. Slice into squares and serve cold.

Notes

Keep everything cold for best results. Chill the bowl and beaters in the freezer for 10 minutes before whipping cream. Do not skip the overnight chill—the graham crackers need time to soften. Pat berries dry to prevent sogginess. For dairy-free, use chilled canned coconut cream. For gluten-free, use gluten-free graham crackers.
