  • 1/4 cup (60 ml) low-sodium soy sauce
  • 4 large garlic cloves, minced
  • 2 tablespoons (30 ml) rice vinegar
  • 1/4 cup (60 ml) water
  • 2 tablespoons (15 grams) cornstarch
  • 2 tablespoons water (for slurry)
  • 2 stalks green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Pat the boneless, skinless chicken thighs dry with paper towels.
  2. In a small bowl, whisk together honey, low-sodium soy sauce, minced garlic, rice vinegar, and water until well combined.
  3. Place the chicken thighs evenly in the slow cooker insert and pour the honey garlic sauce over the chicken, coating each piece.
  4. Set the slow cooker to low and cook for 4 to 5 hours, or on high for 2 to 3 hours until chicken is fork-tender and sauce has thickened slightly.
  5. About 15 minutes before serving, mix cornstarch with 2 tablespoons water to make a slurry. Stir into the slow cooker and cook uncovered for the last 15 minutes to thicken the sauce.
  6. Sprinkle sliced green onions and sesame seeds over the chicken before serving.

Notes

Patting chicken dry helps sauce stick better. Keep slow cooker lid closed as much as possible to maintain heat. Searing chicken before slow cooking is optional but adds flavor. Use low-sodium soy sauce to control saltiness. Cornstarch slurry is key for thickening the sauce. Adjust cooking time if using chicken breasts to avoid dryness.
