Ingredients

Scale
  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa (medium-spiced, chunky or smooth)
  • 1 tablespoon seasoning mix (chili powder, garlic powder, cumin)
  • Optional: fresh cilantro for garnish
  • Optional: shredded cheese for topping
  • Optional: lime wedges for serving

Instructions

  1. Place chicken breasts in a mixing bowl and sprinkle seasoning mix evenly over the chicken. Toss to coat well.
  2. Transfer the seasoned chicken to the slow cooker insert. Pour salsa evenly over the chicken. Do not stir.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken reaches 165°F and is tender enough to shred.
  4. Shred the chicken directly in the slow cooker using two forks or tongs and mix with the salsa juices.
  5. Taste and adjust seasoning if needed. Garnish with fresh cilantro or sprinkle with shredded cheese if desired.
  6. Serve warm over rice, in tacos, or alongside roasted vegetables.

Notes

If salsa is watery, drain some liquid before adding to slow cooker to avoid excess moisture. Let chicken rest 5 minutes before shredding for easier shredding. Use low setting for juicier chicken. Can substitute chicken thighs for juicier meat. Instant Pot can be used on poultry setting for 15 minutes with natural release. Adjust seasoning and add lime juice or jalapeños for extra flavor.
