  • 8 oz cream cheese, softened (Philadelphia recommended; dairy-free if needed)
  • 1 tablespoon ranch seasoning mix (or pinch of garlic powder and dried dill)
  • 8 slices deli turkey (oven-roasted preferred)
  • 8 slices provolone cheese (or cheddar, mozzarella, Swiss)
  • 1/4 cup shredded lettuce (optional; pat dry)
  • 1/4 cup finely shredded carrots

Instructions

  1. Make the spread: In a small bowl, combine 8 oz softened cream cheese and 1 tablespoon ranch seasoning mix. Mix until smooth and spreadable.
  2. Prep your tortillas: Lay one large flour tortilla flat on a cutting board. If stiff, microwave for 10 seconds to make pliable.
  3. Spread the cream cheese: Using a spatula or butter knife, spread a thin, even layer of the cream cheese mixture over the entire surface of the tortilla, leaving about a 1/2-inch border around the edges.
  4. Layer the turkey: Place 2 slices of deli turkey evenly over the cream cheese, overlapping slightly if needed.
  5. Add the cheese: Lay 2 slices of provolone cheese on top of the turkey. Fold if necessary.
  6. Add veggies (optional): Sprinkle a small handful of shredded lettuce and carrots evenly over the cheese.
  7. Roll it up tight: Starting from one edge, roll the tortilla as tightly as possible without tearing, using fingers to tuck in the filling. Press gently to seal the seam.
  8. Wrap and chill: Place the rolled tortilla seam-side down on plastic wrap. Wrap tightly, twisting the ends like a candy wrapper. Repeat with remaining tortillas. Refrigerate for at least 30 minutes (or up to 24 hours).
  9. Slice into pinwheels: Unwrap chilled rolls and place on a cutting board. Using a serrated knife, slice off uneven ends, then slice into 1-inch thick pieces using a gentle sawing motion.
  10. Assemble lunchboxes: Arrange pinwheels in lunchboxes or on a platter. Secure with toothpicks if needed.

Don’t skip the chilling step—it makes slicing much easier. Pat veggies dry to avoid sogginess. Use a serrated knife for clean slices. Roll tightly to prevent falling apart. Can be made up to 24 hours in advance.
