These freezer sandwiches are a quick, easy, and delicious solution for busy lunches, perfect for prepping ahead and enjoying throughout the week without sacrificing flavor or nutrition.

Ingredients

  • Ciabatta rolls, whole grain sandwich bread, or sturdy baguettes
  • Sliced deli turkey, ham, roast beef, or grilled chicken breast (nitrate-free recommended)
  • Cheddar, Swiss, provolone, or mozzarella cheese slices
  • Mayonnaise
  • Dijon mustard or honey mustard blend
  • Crisp lettuce leaves
  • Thinly sliced tomatoes
  • Cucumber ribbons or pickles (add fresh on serving day)
  • Avocado slices (optional, add day of)
  • Salt and pepper to taste
  • Fresh herbs like basil or arugula (optional)

Instructions

  1. Slice ciabatta rolls or bread horizontally. For baguettes, cut into sandwich-sized portions (about 6 inches). Toast lightly if desired (about 3 minutes in a toaster oven).
  2. Mix 2 tablespoons mayonnaise with 1 teaspoon Dijon mustard in a small bowl. Spread evenly on both sides of the bread to create a moisture barrier.
  3. Layer 2-3 slices (about 2-3 oz) of chosen deli meat evenly on the bottom slice. Top with 1-2 slices (about 1-2 oz) of cheese.
  4. Add crisp lettuce leaves and thin tomato slices. Avoid adding watery veggies like cucumber until serving day to prevent sogginess. Season lightly with salt and pepper.
  5. Place the top bread slice and press gently but firmly to hold everything together.
  6. Wrap each sandwich tightly in parchment paper. Place wrapped sandwiches inside a freezer-safe zip-top bag or airtight container.
  7. Lay sandwiches flat in the freezer and freeze for up to 5 days for best freshness.
  8. To enjoy, unwrap sandwich and heat in a microwave for 1-2 minutes or toast in a panini press until warmed through. Add any fresh veggies or avocado after reheating.

Notes

Use a mayo-mustard spread as a moisture barrier to prevent sogginess. Add fresh veggies like cucumber or avocado only after reheating. Toast bread lightly before assembling for better texture after freezing. Wrap sandwiches tightly in parchment and freezer bags to avoid freezer burn. Thaw overnight in fridge or use microwave defrost setting before reheating.
