A festive and easy-to-make family-style fruit pizza featuring a sugar cookie crust, creamy cream cheese frosting, and fresh fruit arranged like the American flag. Perfect for patriotic celebrations and summer gatherings.

  • ¾ cup granulated sugar (150g)
  • 1 cup unsalted butter, softened (226g)

  • 1 tsp vanilla extract

  • 8 oz cream cheese, softened (225g)
  • 1 cup powdered sugar (120g)
  • 1 tsp vanilla extract
  • 23 tbsp heavy cream
  • 2 cups fresh strawberries, hulled and sliced (about 300g)
  • 1 ½ cups fresh blueberries (225g)
  • ½ cup fresh raspberries (optional, 75g)
  • Fresh kiwi, peeled and sliced (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving overhang for easy removal.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy (2-3 minutes with electric mixer).
  3. Add egg and vanilla extract, mixing until just combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed until a soft dough forms.
  6. Press dough evenly into prepared pan, smoothing surface with hands or back of a spoon.
  7. Bake for 12-15 minutes until edges are lightly golden. Let crust cool completely on a wire rack.
  8. While crust cools, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until incorporated.
  9. Slowly add heavy cream, 1 tablespoon at a time, until frosting is spreadable and fluffy. Avoid overbeating.
  10. Spread cream cheese frosting evenly over cooled crust using a spatula.
  11. Arrange blueberries in the top left corner for the blue field of the flag.
  12. Lay rows of sliced strawberries for the red stripes, leaving white stripes exposed with frosting or use sliced kiwi for green stripes if desired.
  13. Chill assembled pizza in the refrigerator for at least 30 minutes to set frosting and meld flavors.
  14. Slice into squares or rectangles and serve.

Notes

Do not overbake the crust to keep it soft enough to slice easily. Use room temperature ingredients for better mixing. Whip frosting just enough to be fluffy but thick. Choose fresh, firm fruit to avoid sogginess. Chill the pizza before slicing for clean cuts. You can make the crust a day ahead and add frosting and fruit before serving.
