  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (90g) chocolate chips or chunks (semi-sweet or dark)
  • 2 tablespoons Pop Rocks candy (any flavor)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a mini muffin tin or line with mini paper liners.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth and glossy. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together cocoa powder, flour, salt, and baking powder. Slowly fold the dry mix into the wet ingredients using a spatula, just until combined. Avoid overmixing.
  4. Using a teaspoon or small cookie scoop, portion the batter evenly into each cup of the mini muffin pan, filling about 3/4 full.
  5. Bake for 12-15 minutes. Check doneness by inserting a toothpick; it should come out with moist crumbs but no raw batter.
  6. Let the brownies cool in the pan for 5 minutes, then transfer to a cooling rack.
  7. Melt chocolate chips in a microwave-safe bowl in 20-second bursts, stirring between each until smooth, or use a double boiler.
  8. Spoon or pipe a small dollop of melted chocolate onto each brownie bite. Immediately sprinkle with a pinch of Pop Rocks candy while chocolate is still warm.
  9. Allow the chocolate to firm up at room temperature or refrigerate for 10 minutes before serving.
