  • ½ cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons heavy cream or whole milk
  • 1 pint fresh strawberries, hulled and sliced
  • 1 pint fresh blueberries
  • Optional: fresh mint leaves for garnish

Instructions

  1. In a large bowl, whisk together 1 ½ cups flour, ¼ cup sugar, and ¼ teaspoon salt. Add the cold, cubed butter. Using a pastry cutter or your fingers, cut the butter into the flour until it resembles coarse crumbs (pea-sized bits).
  2. Stir in the egg yolk and lemon zest. Gradually add ice water, one tablespoon at a time, mixing gently until the dough just comes together. Avoid overworking it or the crust will be tough.
  3. Shape the dough into a disk, wrap it in plastic, and chill in the refrigerator for at least 30 minutes (up to 2 hours).
  4. On a lightly floured surface, roll the dough into a 12-inch circle, about ⅛-inch thick. Transfer it to your pizza pan or baking sheet. Chill again for 10 minutes to prevent shrinking during baking.
  5. Preheat oven to 375°F (190°C). Using a fork, prick the crust all over to prevent bubbling. Bake for 15-18 minutes until golden brown. Remove and let cool completely before adding toppings.
  6. In a bowl, beat 8 oz softened cream cheese with ½ cup powdered sugar and 1 teaspoon vanilla extract until smooth. Add 2 tablespoons heavy cream to loosen the texture. Spread evenly over the cooled crust with an offset spatula.
  7. Create the blue rectangle with blueberries in the upper left corner (about one-third width and height). Fill the rest of the pizza with horizontal rows of sliced strawberries and blueberries to mimic the flag stripes.
  8. Refrigerate the finished fruit pizza for at least 30 minutes to let the cream cheese set and flavors meld. Garnish with fresh mint leaves if desired right before slicing.

Chill the dough properly to ensure a tender, flaky crust. Prick the crust with a fork before baking to prevent bubbles. Soften cream cheese well before mixing to avoid lumps. Arrange berries patiently for a neat flag design. If cream cheese base is too thick, add a splash more cream or milk but avoid making it runny. Refrigerate the pizza before serving for best flavor and texture. Use frozen berries if fresh are unavailable, but thaw and drain well.
