  • 1 cup (227g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or heavy cream (optional)
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced
  • 1 cup mandarin orange segments (fresh or canned, drained)
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9 or 10-inch round pizza pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, beat softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3 to 4 minutes.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Transfer dough to prepared pan and press evenly across the bottom.
  7. Bake for 18-22 minutes until edges are golden and center is set but slightly soft. Cool completely on a wire rack.
  8. Beat cream cheese and softened butter together until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy. Add milk by teaspoon if frosting is too thick.
  9. Spread cream cheese frosting evenly over cooled cookie base, about ¼ inch thick.
  10. Arrange sliced strawberries, blueberries, kiwi, and mandarin orange segments on top of frosting as desired.
  11. Refrigerate assembled fruit pizza for at least 30 minutes before serving. Serve chilled or at room temperature.

Notes

Do not overbake the cookie base to keep it chewy. Use room temperature butter and cream cheese for smooth mixing and spreading. Chill the assembled pizza to set frosting and meld flavors. Fresh, ripe fruit enhances flavor and appearance. Frozen fruit can be used but drain well to avoid sogginess.
