Instructions

  1. Remove any damaged outer leaves from both cabbages. Cut them into quarters, remove the core, then finely shred the cabbage using a knife, box grater, or food processor.
  2. Shred the carrots into thin ribbons.
  3. Thinly slice the green onions, including the tender green tops. Chop the parsley finely.
  4. In a small bowl, whisk together lemon juice, apple cider vinegar, honey, olive oil, salt, and pepper. Add celery seed or Dijon mustard if using. Adjust seasoning to taste.
  5. Pour the dressing over the shredded vegetables and herbs in a large mixing bowl. Toss thoroughly but gently to coat evenly without bruising the cabbage.
  6. Optionally, cover and refrigerate the coleslaw for 15-30 minutes to let flavors meld and soften the cabbage slightly.
  7. Before serving, toss again and adjust salt or pepper if needed.
