  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Line a 9×13 inch baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, stir together Greek yogurt, honey, vanilla extract (if using), and lemon zest (if using) until smooth and evenly combined.
  3. Fold in chia seeds if using.
  4. Pour the yogurt mixture onto the prepared baking sheet and spread evenly to about 1/4 inch thickness using a spatula or spoon.
  5. Scatter fresh blueberries evenly over the yogurt and gently press them into the surface without mashing.
  6. Place the tray in the freezer for at least 4 hours or overnight until the yogurt is completely firm.
  7. Remove the frozen bark from the tray by lifting the parchment paper edges and break or cut into bite-sized pieces using a sharp knife warmed under hot water.
  8. Store the bark bites in an airtight container or freezer bag in the freezer until ready to serve.

Notes

Use thick, full-fat Greek yogurt for best texture. If yogurt is too runny, strain it in cheesecloth for 30 minutes before mixing. Avoid overloading with blueberries to prevent sogginess. Freeze for at least 4 hours or overnight for best results. Warm knife under hot water before cutting to avoid shattering.
