A chunky, colorful dip made with black beans, black-eyed peas, corn, bell peppers, and a tangy lime vinaigrette. Perfect for potlucks and summer gatherings, this crowd-pleaser is quick, easy, and packed with fresh flavors.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 can (15 oz) corn or 1 ½ cups frozen corn, thawed
  • 1 large red bell pepper, diced small
  • 1 medium green bell pepper, diced small
  • ½ medium red onion, finely diced
  • 1 medium jalapeño, seeded and minced
  • 2 medium Roma tomatoes, seeded and diced
  • 2 ripe but firm avocados, diced
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh lime juice (about 2 large limes)
  • ⅓ cup extra virgin olive oil
  • 1 tablespoon honey
  • ½ teaspoon ground cumin
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Make the vinaigrette: In a small bowl or mason jar, combine ¼ cup fresh lime juice, ⅓ cup olive oil, 1 tablespoon honey, ½ teaspoon ground cumin, 1 minced garlic clove, ½ teaspoon salt, and ¼ teaspoon black pepper. Whisk vigorously or shake until honey is dissolved. Set aside.
  2. Drain and rinse the beans: Open both cans of beans and rinse thoroughly with cold water until foam stops. Let drain for a minute or two.
  3. Prep the corn: If using canned corn, drain well. If using frozen corn, thaw and pat dry.
  4. Dice the vegetables: Dice bell peppers, red onion, jalapeño, and tomatoes into small, even pieces (about ¼-inch).
  5. Combine everything except avocado and cilantro: In a large bowl, add black beans, black-eyed peas, corn, diced peppers, red onion, jalapeño, and tomatoes. Pour vinaigrette over top and stir gently until well coated.
  6. Let it marinate (optional but recommended): Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  7. Add avocado and cilantro: Just before serving, dice avocados and fold in gently along with chopped cilantro. Stir carefully. Taste and adjust salt or lime juice if needed.
  8. Serve: Transfer to a serving bowl and scoop up with tortilla chips. Garnish with extra cilantro leaves and lime wedges if desired.

Notes

For best flavor, let the base marinate in the fridge for at least 30 minutes before adding avocado and cilantro. Add avocado right before serving to prevent browning. If you’re sensitive to raw onion, soak diced onion in cold water for 10 minutes to mellow the flavor. Use fresh lime juice for the brightest taste.
