Fresh Zesty Peach Salsa Recipe with Jalapeño and Cilantro

A refreshing and vibrant peach salsa with a perfect balance of sweet, spicy, and herbal notes, ideal for summer gatherings and easy to prepare.

Ingredients

  • 3 ripe, medium-sized peaches, peeled and diced
  • 1 small jalapeño, seeded and finely chopped
  • ½ cup fresh cilantro leaves, roughly chopped
  • ¼ cup finely diced red onion
  • Juice of 1 lime (about 2 tablespoons)
  • 1 small clove garlic, minced (optional)
  • ½ teaspoon salt
  • Pinch of freshly ground black pepper
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Wash and peel the peaches. Blanch them briefly in hot water for about 30 seconds, then plunge into cold water before peeling.
  2. Dice the peeled peaches into small, roughly ½-inch cubes.
  3. Slice the jalapeño in half lengthwise and remove seeds if you prefer less heat. Finely chop the pepper.
  4. Peel and finely dice about ¼ cup of red onion.
  5. Roughly chop ½ cup of fresh cilantro leaves.
  6. In a mixing bowl, combine the diced peaches, jalapeño, red onion, and cilantro. Add minced garlic if using.
  7. Squeeze the juice of one lime over the mixture. Drizzle 1 tablespoon of extra virgin olive oil, then sprinkle ½ teaspoon salt and a pinch of freshly ground black pepper.
  8. Mix everything gently to combine without mashing the peaches, keeping the salsa chunky and colorful.
  9. Let the salsa sit in the fridge for at least 20 minutes before serving to let the flavors meld.

Notes

If salsa is too spicy, stir in a teaspoon of honey to mellow the heat. Prepare ahead and chill for better flavor. Avoid blending to keep chunky texture. Use freestone peaches for easy peeling and firm texture. Remove jalapeño seeds for less heat or keep for more kick.
