Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, letting some hang over the sides for easy removal.
  2. Shred about 1 ½ cups of zucchini (roughly one medium zucchini). Place the shreds in a clean kitchen towel and squeeze firmly to remove excess water.
  3. In a medium bowl, sift together 1 cup all-purpose flour, ½ cup unsweetened cocoa powder, 1 teaspoon baking powder, and ½ teaspoon salt. Whisk to combine evenly.
  4. In a large bowl, whisk ½ cup melted unsalted butter with ¾ cup granulated sugar until smooth. Add 2 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla extract.
  5. Gradually fold the dry ingredients into the wet ingredients with a spatula until just combined. Avoid overmixing.
  6. Gently fold in the squeezed zucchini shreds and ½ cup semi-sweet chocolate chips.
