  • ½ cup diced apple (Honeycrisp or Fuji, peel on)
  • ¼ cup diced celery
  • 2 tablespoons finely diced red onion (soaked in cold water for 5 minutes to mellow, optional)
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste
  • 4 to 6 large flour tortillas or lettuce wraps (for low-carb)
  • Optional: toasted walnuts or pecans, dried cranberries, halved red grapes, sliced almonds

Instructions

  1. Prepare the chicken: If using rotisserie chicken, remove skin and bones, then shred or dice into bite-sized pieces (about 2 cups). If using canned chicken, drain well and flake with a fork. If cooking from scratch, poach chicken breasts in simmering salted water for 12-15 minutes until cooked through, then cool slightly and shred.
  2. Make the dressing: In a mixing bowl, combine Greek yogurt, lemon juice, Dijon mustard, and honey or maple syrup. Whisk until smooth and creamy. Taste and adjust lemon or honey to preference.
  3. Mix in the add-ins: Add diced apple, celery, red onion, and fresh parsley to the bowl with the dressing. Stir to coat evenly.
  4. Add the chicken: Gently fold the shredded chicken into the mixture using a spatula or large spoon. Be careful not to overmix. Season generously with salt and black pepper. Taste and adjust seasoning if needed.
  5. Chill (optional but recommended): Cover the bowl and refrigerate for 15-20 minutes to allow flavors to meld. If in a hurry, skip this step.
  6. Assemble the wraps: Lay tortillas or lettuce leaves flat. Spoon about ½ cup of chicken salad mixture down the center of each wrap. Do not overfill.
  7. Wrap it up: Fold in the sides of the tortilla, then roll tightly from the bottom. For lettuce wraps, fold bottom up first, then roll from the side. Place seam-side down. If packing for later, wrap each tightly in plastic wrap or parchment paper.
  8. Serve or store: Serve immediately or refrigerate for up to 3 days. Lettuce wraps are best eaten within a few hours.
