  • 1 can (15 oz) dark red kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • Fresh cilantro, chopped (for serving)

Instructions

  1. Prep your vegetables: Dice the onion, bell peppers, and celery. Mince the garlic. Set aside.
  2. Brown the turkey: Heat 1 tablespoon olive oil (or 1/4 cup broth) in a Dutch oven over medium-high heat. Add ground turkey, break apart, and cook until no longer pink, about 6-8 minutes. Season with salt and pepper. Transfer to a plate.
  3. Sauté the aromatics: In the same pot, add a splash of broth or oil if needed. Sauté onion, bell peppers, and celery for 4-5 minutes until softened. Add garlic and cook 30 seconds until fragrant.
  4. Toast the spices: Sprinkle chili powder, smoked paprika, cumin, chipotle powder, oregano, and cayenne over vegetables. Stir constantly for 30 seconds to 1 minute until fragrant.

Notes
