Hot Honey Whipped Feta Dip with Walnuts and Thyme

  • 8 ounces feta cheese (block, good quality)
  • 4 ounces cream cheese, softened
  • 3 tablespoons hot honey
  • ½ cup walnuts (about 60g), toasted and roughly chopped
  • 1 tablespoon fresh thyme, finely chopped, plus extra for garnish
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon freshly squeezed lemon juice
  • 1 small clove garlic, minced (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt, if needed

Instructions

  1. Toast the walnuts in a dry skillet over medium heat, stirring frequently until fragrant and lightly browned, about 3-5 minutes. Remove from heat and let cool.
  2. In a food processor, combine the feta cheese and softened cream cheese. Pulse a few times to break up the chunks.
  3. Add the hot honey, olive oil, lemon juice, fresh thyme, minced garlic (if using), and black pepper. Blend until the mixture is light, fluffy, and smooth, about 1-2 minutes.
  4. Taste and adjust seasoning by adding more lemon juice for brightness or more honey for sweetness. Add salt sparingly if needed.
  5. Remove the blade and fold in most of the toasted walnuts gently with a spatula, reserving some for garnish.
  6. Transfer the dip to a serving bowl. Drizzle extra hot honey on top, sprinkle remaining walnuts, and garnish with fresh thyme sprigs.

Notes

Let cream cheese come to room temperature before mixing for smooth texture. Use block feta packed in brine for creamier dip. Toast walnuts carefully to avoid burning. Adjust hot honey amount to control spiciness. Avoid overblending to prevent grainy texture. Bring dip to room temperature before serving for best flavor and texture.
