  • 4 oz sharp cheddar cheese, cubed
  • 2 medium apples (Honeycrisp or Fuji), sliced
  • 1 cup red grapes, washed and left on the stem
  • 1/2 cup dried cranberries or dried apricots
  • 4 oz salami, thinly sliced (optional)
  • 1 cup pretzel sticks or mini pretzels
  • 1 cup whole wheat crackers or butter crackers
  • 2 tablespoons honey
  • 1/4 cup dark chocolate chips or small chocolate chunks
  • Fresh rosemary sprigs or thyme (optional, for garnish)
  • Edible flowers or a sprinkle of cinnamon (optional, for garnish)

Instructions

  1. Prep the cheese: Take the brie out of the fridge and let it sit at room temperature for about 10 minutes. Slice the cheddar into small cubes, about 1/2-inch each. Place the brie wedge whole on the board, and arrange the cheddar cubes in a small pile nearby.
  2. Slice the apples: Wash the apples and cut them into thin slices, about 1/4-inch thick. Leave the skin on for color and fiber. If making ahead, toss the slices with a teaspoon of lemon juice to prevent browning. Arrange the apple slices in a fan shape on one side of the board.
  3. Arrange the fruit: Place the grapes in a small cluster on the board, leaving them on the stem. Add the dried cranberries or apricots in a small bowl or directly on the board. Scatter a few around for visual appeal.
  4. Add the meats: If using salami, fold each slice in half and then in half again to create a small triangle. Arrange them in a row or a small pile. For kids, roll the salami into little spirals.
  5. Fill in with crunch: Scatter the pretzel sticks and crackers around the board, filling in any empty spaces. Group them loosely for easy grabbing.
  6. Add the sweet touches: Drizzle the honey over the brie. Place the chocolate chips in a small bowl or scatter them directly on the board.
  7. Garnish and serve: Add a few sprigs of rosemary for a fall touch. Sprinkle a tiny bit of cinnamon over the apple slices if desired. Serve immediately, or cover with plastic wrap and refrigerate for up to 2 hours. Take it out 15 minutes before serving to let the cheese soften.

For best results, let the brie come to room temperature before serving. To prevent apple slices from browning, toss them with lemon juice. Avoid overcrowding the board; leave space between items.
