A quick and easy no-bake dessert perfect for summer parties, featuring layers of creamy cheesecake filling, fresh strawberries and blueberries, and crunchy graham cracker crumbs.

  • 1 ½ cups graham cracker crumbs (about 150g)
  • 5 tablespoons unsalted butter, melted (about 70g)
  • 16 ounces cream cheese, softened (about 450g)
  • ¾ cup powdered sugar (about 90g)
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon zest
  • 1 cup heavy cream (240ml)
  • 2 cups fresh strawberries, hulled and sliced (about 300g)
  • 1 ½ cups fresh blueberries (about 225g)

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until crumbs are evenly coated and resemble wet sand. Set aside.
  2. In a large bowl, beat softened cream cheese with powdered sugar using an electric mixer on medium speed until smooth and creamy, about 3 minutes.
  3. Add vanilla extract and lemon zest to the cream cheese mixture and mix for another 30 seconds.
  4. In a separate bowl, whip heavy cream until soft peaks form, about 4-5 minutes.
  5. Gently fold the whipped cream into the cream cheese mixture until fully combined and airy, being careful not to overmix.
  6. Wash, hull, and slice strawberries. Rinse blueberries and pat dry.
  7. Spoon 2 tablespoons of the graham cracker crust into the bottom of each glass (makes about 6 parfaits).
  8. Add a layer of cheesecake filling (about 3 tablespoons), then a layer of mixed berries (2-3 tablespoons).
  9. Repeat the layers once more, finishing with a few berries on top for a festive look.
  10. Refrigerate the parfaits for at least 2 hours before serving to let flavors meld and the filling set.
  11. Before serving, optionally garnish with a mint leaf or a small drizzle of honey.

Notes

Use softened cream cheese at room temperature to avoid lumps. Do not overwhip the cream; stop at soft peaks for best texture. Dry berries thoroughly to prevent soggy parfaits. For dairy-free version, substitute cream cheese and heavy cream with coconut-based alternatives and butter with coconut oil. Graham cracker crumbs can be replaced with almond flour for gluten-free option.
