Wholesome Detox Lemon Ginger Soup for New Year Reset

A warm, bright, and deeply comforting bowl of vegetables and broth that helps reset after holiday indulgences. This soup combines ginger’s gentle heat with lemon’s freshness for a nourishing meal that comes together in under an hour.

  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated (about a 2-inch piece)
  • 3 large carrots, peeled and diced (about 1 ½ cups)
  • 3 celery stalks, diced (about 1 cup)
  • 1 medium zucchini, diced (about 1 ½ cups)
  • 6 cups vegetable broth, low-sodium
  • 1 cup water
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground black pepper
  • 1 teaspoon sea salt, plus more to taste
  • Juice of 2 large lemons (about ¼ cup)
  • Zest of 1 lemon (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: ½ cup cooked quinoa or brown rice

Instructions

  1. Prep your vegetables first: dice onion, carrots, celery, and zucchini into ½-inch cubes; mince garlic; peel and grate ginger; zest and juice lemons.
  2. Heat olive oil in a large soup pot over medium heat. Add diced onion and sauté for 4-5 minutes until translucent.
  3. Add minced garlic and grated ginger; stir constantly for about 30 seconds until fragrant.
  4. Add carrots and celery; cook for 3-4 minutes, stirring occasionally.
  5. Add diced zucchini and cook for another 2 minutes.
  6. Sprinkle in ground turmeric, black pepper, and salt; stir well.
  7. Pour in vegetable broth and water; stir, scraping the bottom of the pot. Bring to a boil over high heat.
  8. Reduce heat to low and simmer gently, uncovered, for 20-25 minutes until vegetables are tender.
  9. If adding quinoa or rice, stir in during the last 10 minutes of simmering.
  10. Remove pot from heat and let cool for 2-3 minutes.
  11. Stir in lemon juice and lemon zest. Taste and adjust seasoning.
  12. Ladle into bowls, garnish with fresh parsley, and serve immediately.

Notes

Don’t skip sweating the aromatics; grate ginger instead of chopping; add lemon at the very end to preserve brightness; taste as you go; soup freezes well (add lemon after reheating). For a spicy version, add diced jalapeño or red pepper flakes. For a creamy version, replace 1 cup broth with coconut milk. For protein, add chickpeas or shredded chicken during last 10 minutes.
