Instructions

  1. Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving overhang on two sides. Lightly grease the pan and parchment.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, whisk eggs and sugar until pale and slightly thickened, about 1 minute. Add oil, buttermilk, apple butter, and vanilla; whisk until smooth.
  4. Pour dry ingredients into wet ingredients. Fold with a rubber spatula until just combined (a few lumps are fine).
  5. Pour batter into prepared pan and spread evenly. Tap pan on counter to release air bubbles.
