  • 1 cup (245g) pumpkin puree
  • 1/2 cup (120ml) milk (any kind)
  • 2 large eggs
  • 1/3 cup (80ml) maple syrup
  • 2 tablespoons (30ml) coconut oil, melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional mix-ins: 1/3 cup chocolate chips, dried cranberries, or chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper or silicone liners. If using paper liners, spray them with cooking spray.
  2. In a large mixing bowl, combine the rolled oats, pumpkin pie spice, baking powder, and salt. Stir well.
  3. In a separate bowl or liquid measuring cup, whisk together the pumpkin puree, milk, eggs, maple syrup, melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Let the mixture sit for 5 minutes.
  5. After 5 minutes, fold in any optional mix-ins (chocolate chips, dried cranberries, or chopped pecans).
  6. Scoop the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  7. Bake for 18 to 22 minutes, until the tops are set and lightly golden, and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the cups cool in the pan for 5 minutes, then transfer them to a cooling rack to cool completely.
  9. Once completely cool, they are ready to eat. Enjoy warm or at room temperature.

Notes

Let the oats soak in the wet ingredients for 5 minutes before baking for the best texture. Grease paper liners with cooking spray to prevent sticking. These cups taste even better on the second day as flavors meld. Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.
